Pie in a glass

What's a girl to do when she's in the mood for pumpkin pie, but a) don't have the time or energy to make one and b) don't want to eat a bunch of sugar and calories mostly in the form of pie crust? Well I've been blending up this smoothie lately and think it's a delicious alternative and healthful way to enjoy the season's eatings. Nutritional bonus: this smoothie is loaded with potassium, zinc, and fiber...plus it will give you 100% of your daily value for beta-carotene, an important antioxidant that fights cancer.

Recipe
-1/2 cup of canned organic pumpkin (not pumpkin pie filling, just plain canned pumpkin)
-3/4 cup Greek yogurt
-1/4 organic vanilla almond milk
-2-4 ice cubes
-1/4 tsp cinnamon
-1/8 tsp nutmeg
-1/8 tsp. ginger
-1 tablespoon honey (optional)

*You can use 1 tsp. of "pumpkin pie spice" in place of the cinnamon, nutmeg and ginger spices - I just didn't have any. You can also experiment with adding vanilla extract, brown sugar, maple syrup, honey or a banana.
